Lunch time and dinners can sometimes be a bit busy for me, especially when it's just my youngest and myself. Something quick and easy always tends to take the advantage, so having something that I can throw in when I don't feel like it cooking is just downright helpful and amazing. That's where these little guys come in handy! They are delicious and provide that warm, comfort food that I occasionally crave. The below is for individual freezer prep, but you can combine them to make it serve 2 or more!
Freezer Prep Lasagna
Serves 12 | Serving Size 1 Lasagna
Ingredients
12 small loaf pans
18 Dreamfields Lasagna Noodles or Tinkyada Brown Rice Lasagna Noodles (see note)
12-oz can tomato paste
29-oz can tomato sauce
3 tsp garlic, minced
1/2 white onion, finely diced
2 tsp oregano
1/4 tsp Himalayan Pink Salt
1/2 tsp black pepper
1 container 2% Daisy cottage cheese
1/2 cup parmesan cheese
4 eggs, whites only
2 tbsp parsley
1/4 cup shredded part-skim mozzarella cheese
coconut oil spray
Instructions
Prepare small loaf pans with coconut oil spray.
Cook noodles according to directions, allow to cool, and cut in half hamburger style. Set aside
For Sauce:
Whisk tomato paste and tomato paste in a medium saucepan until well combined.
Add garlic, onion, oregano, salt, and pepper to saucepan.
Heat over medium heat until warm. Set aside.
For Cheese Layer:
Combine cottage cheese, parmesan, egg whites, and parsley until well combined.
Prepare Lasagnas:
Place some sauce in the bottom of each of the 12 pans enough to layer the bottom.
Add a noodle-half on top.
Add some cottage cheese layer.
Add more sauce.
Repeat three times, ending with sauce layer.
Top with 1/4 cup mozzarella.
To Freeze:
Cover loaf pans with plastic wrap.
Cover with foil.
Freeze for up to 3 months.
To Cook:
Preheat oven to 375 degrees F.
Remove plastic wrap.
Bake covered for 45 minutes.
Remove aluminum foil and bake for another 10-15 minutes, or until completely cooked through.
Important Note: Do not use Dreamfields unless cooking right away for one evening meal. Trim Healthy Mama does not recommend eating them repeatedly over a week, or month, as they have no actual carb fuels in them. If you are freezer prepping, use brown rice lasagna noodles instead.
