It's Friday night, my youngest is hungry, and I haven't made dinner yet. Oops! (I cheated for lunch and was still full. But that's another story...!) So I looked up what I had marked down for tonight: Chicken and Wild Rice Soup (from the THM Cookbook, page 100). But I didn't have time for that to cook, there was no details on an Instant Pot version, and I was impatient; so was Emma. So I researched Instant Pot Wild Rice soup. This is the result of a combination of the two!
Instant Pot Chicken Wild Rice Soup
SERVES 6-8 | SERVING SIZE ABOUT 1.5 CUPS
Ingredients
5 medium carrots, chopped
5 celery stalks, chopped
1 cup wild rice, uncooked
4 cloves garlic, minced
1 tsp Himalayan Pink Salt
1 tsp thyme, dried
1/2 tsp sage, ground or dried
1/2 tsp black pepper, ground
4 cups chicken broth
2 (12-oz) bags frozen cauliflower
1.5 oz 1/3-less-fat cream cheese
Instructions
Combine all ingredients from carrots down through pepper and 2 cups chicken broth in your Instant Pot.
Cook on Soup setting with High pressure for 40 minutes. Instantly release the steam.
Microwave your frozen cauliflower per instructions on bag.
Combine cauliflower, remaining chicken broth, and cream cheese in a blender. Blend on high until smooth.
When Instant Pot is finished, add cauliflower mixture and stir well. Enjoy!

Freezer Prep
To make this into a freezer prep meal, complete steps 3 and 4 then combine everything into a freezer gallon bag. Make sure to label it with the name and as "THM E" or "Low Fat" so you know what it is! Defrost in the fridge the day before then throw in the Instant Pot for 40 minutes.
