You'll notice that this meal plan is a little shorter than most. I got a late start! My weekend following my husband's departure for work was busy with cleaning and tidying up the house from the destruction of messy children, as well as preparation for a home appraisal. This week it is just myself and my youngest, Emma who is almost 2 years old. She's not a very picky eater, but she does leave food she doesn't particularly like on her plate. I do repeat meals as it is cost-effective. I understand that leftovers aren't for everyone, but here are some tips for heating up some of the leftovers from this meal plan! In total, this meal plan cost $81 in the city of Wasilla.
The total above does include buying a few extra items that aren't included in the menu, such as bananas for my daughter and spices that I needed to replace (cayenne and thyme). It does not include the ingredients for the chocolate banana muffins, soup, or Hangry Pockets or the pasta, brown rice, and meat for the meatballs as these were prepped, already purchased, or leftover from the week before. I had a budget of $100 so I tried to use what I already had in my kitchen pantry!

On Monday, I had leftover Chicken Wild Rice soup that I had made on Saturday night. My daughter had a PB&J. Instead of the roasted zucchini I had made Sunday night, she had a banana and some bell pepper from a salad I had prepped as she didn't like the roasted zucchini.
