Jalapeno Popper Omelet (THM S, Low Carb, Keto Friendly)

This recipe is a favorite in our house. It has the perfect combination of spicy, creamy, and smoky. It's tempting to have every morning! It's also so easy to make and budget friendly, which is a huge bonus in my book!


Jalapeno Popper Omelet

Serves 1


Ingredients

  • 2-3 eggs

  • 1 oz 1/3 less fat cream cheese

  • 1 slice bacon, cooked and chopped small

  • 4-6 slices jalapeno (from the jar works best)

  • 2-3 tsp Macho Nacho Seasoning (see note)

  • sprinkle of shredded cheddar cheese

  • coconut oil for frying


Instructions

  1. Combine egg and cream cheese using a fork in a bowl. Mix until cream cheese has small clumps (or large if you really like cream cheese).

  2. Spray small pan with oil or put a small dollop of oil into small pan.

  3. Pour egg mixture into pan and sprinkle with the Macho Nacho seasoning and bacon bits.

  4. Place sliced jalapenos and sprinkling of shredded cheddar on one half of egg.

  5. When egg has slightly cooked, fold in half over the jalapeno and cheese side.

  6. Let cook until it is ready to flip, then flip and cook other side until done. Serve.

The Macho Nacho Seasoning is from the Trim Healthy Cookbook page 492. It is also great on ground beef for tacos! It adds a yummy taco flavor to this already delicious omelet. If you don't have it, you can always make it without using it. Just know that the nutrition facts will change if you omit it!
