Lunches can be difficult at times, especially when you have a hangry toddler (or two) running around! That's why I absolutely love these boxes! They can be packed in a Bento box of your choosing or you can just slap it all onto a plate. I like to portion out my meat and berries in small containers that I store in the fridge so I can just put them on the plate later. I only use one Bento box for my Wednesday morning Bible study at church. That way I'm not tempted by the delicious smelling food from the potluck tables! My mom found this amazing idea from The Well Planned Kitchen. Each protein box should include the following:
Choice of Protein:
2-3 slices deli meat or salami
1/3 cup chopped steak
1 small salmon filet
1/3 cup chopped chicken
1 bone-in piece of chicken
1-2 cooked low-carb meatballs
1 small pack drained tuna
1/4 - 1/2 cup cottage cheese
Add 1/4 Cup of:
Strawberries
Blackberries
Raspberries
Add 1 Serving:
Lily's Baking Chips
Lily's Chocolate Bar
Other low-carb chocolate
Dark chocolate
Choose 1/4 Cup:
Nuts: almonds, pistachios, walnuts, pecans, peanuts
Seeds: pumpkin, sunflower, walnuts
Pickles
Olives - black or green
Artichoke Hearts
Cheese (string cheese or other favorite cheese)
Add 1/4 Cup of:
Grape or cherry tomatoes
Sliced cucumbers
Sliced carrots
1/2 of an avocado
I also sometimes add a few bell peppers to my box since they are a Fuel Pull. Celery with a little bit of peanut butter is also a great addition! For growing kids, make sure to add something that is an E - such as some apple slices, grapes, or carrots.
